My meal plan is somewhat the same as last week’s because we didn’t get around to eating a few meals! We were blessed to go over to friends for dinner Friday night, Saturday we got home late and had cereal for dinner and last night we were again blessed when friends took us out for dinner!
Here is this week’s simple meal plan:
Breakfasts:
Country Ham & Cheese Biscuits, Cereal, Apples, Oranges
Lunches:
Leftovers
Dinners:
Monday- Fried Chicken Legs with Mashed Potatoes and Gravy and Broccoli
Tuesday-Cheeseburger Soup
Wednesday- Leftover Soup
Thursday- Traveling
Friday- Potato Soup
Saturday- Homemade Pizza
It’s definitely a frugal and simple meal plan this week! I’m keeping it simple because lately by dinner time I’m tired and don’t feel like cooking!!

After last week without a structured meal plan, I did a little more planning for this week in hopes that I won’t be panicking around 2 or 3 every afternoon as to what I’m cooking for dinner!
Most of our meals are from food that we already have in the freezer/pantry but I do need to go to the grocery store to pick up a few missing ingredients! And while I’m there I’ll stock up on staples and items that are on sale! I just love the beginning of the month, I feel rich with $160 in my grocery budget!
Breakfasts:
Cereal, Oranges, Apples, Muffins
Lunches:
Leftovers
Dinners:
Monday-Baked Ribs with BBQ Sauce Glaze & Baked Potatoes
Tuesday-Creamy Ranch Pork Chops with Broccoli & Bread
Wednesday-Leftovers from Tuesday
Thursday-My 23rd birthday! Dinner out or in, but I’m not cooking!!
Friday- Cheeseburger Soup
Saturday-Leftovers from Friday
Sunday- Homemade Pizza

I didn’t do any major grocery shopping last week and don’t plan to this week either. We did stop by Kroger last Monday and spent about $18 stocking up on $1.99/pound boneless, skinless chicken breasts and purchasing a few items to get us through the week. Then Saturday we stopped by Wal-Mart to pick up orange juice with calcium and Kroger for chocolate milk (that was on sale for $.99), grapes and a few other items. We spent $13.50 at Wal-Mart and Kroger.
After these trips we have a grand total of $30.31 in the grocery budget for February! It doesn’t sound like much but we have plenty of food to get us through this week and I am confident that $30 will be more than enough to purchase what we need for the rest of the month!
Here’s the Meal Plan for this week:
Breakfasts:
Cereal, Fruit, Country Ham & Cheese Biscuits
Lunches:
Leftovers
Dinners:
Monday- Venison Fajitas
Tuesday- Fried Chicken Legs with Mashed Potatoes & Gravy
Wednesday- Easy Lasgna
Thursday-Saturday- Going to visit my family! My dad turns 50 Thursday & my family is giving me a baby shower on Saturday!!

This past week I went back to grocery store for the first time after the pantry challenge! Getting back on my regular grocery budget ($160/month) is so much more than my pantry challenge budget ($50)…I felt like I had so much money!! I ended up spending right at $100 this week but I have plenty of groceries to definitely last 2 more weeks so I am right on track with my budget! (I even stocked up on sugar, oil, spaghetti sauce & apple juice!) I also purchased a 5 quart container of ice-cream and cheese puffs for my husband since he was so wonderful during the pantry challenge!
So, here’s what’s on the menu at our home this week:
Breakfasts:
Muffins
Country Ham & Cheese Biscuits
Grapes
Apples
Lunches:
Leftovers
Dinners:
Monday: Red Beans and Rice
Tuesday: Zuppa Tuscana Soup
Wednesday & Thursday: Vegetable Soup (big pot!)
Friday: Fried Chicken Legs with Mashed Potatoes and Gravy
Saturday: Sausage Pizza

Today marks the end of the pantry challenge! I am excited that it was so successful! We managed to only spend $63.92 on groceries this month which left us with $96.08 in our home improvement budget! We’re really excited about this!
This was a challenge at times but really wasn’t as hard as I thought it was going to be! It is amazing how much food we did have in the freezer and pantry! I learned to be creative and put some new spins on meals but really we didn’t notice much difference than a regular month when I go grocery shopping! We did notice that we didn’t have as many convenient snacks on hand but I made some homemade snacks like spicy crackers, cinnamon bread, granola and “Cheerio” Krispie Treats!
Cheerio Krispie Treats! I got this idea from Jen at Balancing Beauty and Bedlam. I used Cheerios in place of Rice Krispies! They were delicious!

Here’s my pantry tonight! It’s getting pretty bare but it’s also great knowing that it is pretty cleaned out and there are no out of date foods in there!
Now, you’re probably thinking, won’t your February grocery expenses be really high because you used up a lot of your food? I honestly don’t think it will be! I am sure I will probably spend the entire $160 on groceries but considering I’ve learned to be more creative this past month and haven’t spent more than $25 during any trips to the grocery store in a month I will be approaching my shopping differently! There are some things I’m running low on (like chicken) but I’ve got plenty of deer and pork in the freezer so I can begin slowly stocking my freezer and pantry back up!
Here are the meals I came up with this week:

Monday: Chicken, Rotel & Rice
Tuesday: Taco Salads using leftover taco meat from Sunday!

Wednesday: Spaghetti

Thursday: Homemade Cheese Bread & Sausage Pizza

This sausage pizza was absolutely amazing!

Friday: Breakfast for dinner! Homemade Biscuits, Sausage, Gravy, Cinnamon Bread & Cinnamon Applesauce. A delicious dinner!

Saturday: Homemade Chicken Noodle Soup…perfect on a snowy evening!
