		<description>First, I want to say that the potato soup can be expensive, so most of the time I use canned potatoes and cream of celery soup.  I also add about 1/2 cup milk and last time I added an extra can of vegetables.  The more additions, the more pie shells you&#039;ll need to hold it all.  Also, you can always used leftover chicken from a roasted chicken or leftover baked chicken thighs.  The seasoning of the leftover chicken puts a nice twist on the chicken pot pie flavor.  Hope y&#039;all enjoy it!  :)

Chicken Pot Pie
3-4 boneless, skinless chicken breasts
1 can mixed vegetables – drained
1 can cream of potato soup
1 can cream of chicken soup
salt &amp; pepper to taste
4 frozen deep-dish pie shells (or 6 regular pie shells)

Boil chicken in pot of salted water for about one hour.  Cool, cut into cubes.  Mix together soups, vegetables &amp; chicken.  Salt &amp; pepper to taste.  Pour into 2 pie shells.  Place remaining 2 pie shells on top.  Bake in 375 degree oven for 45 min.  Remove pie tins for the last 5 min to let pot pie brown on top.  Serve with salad and crackers.</description>
