2 3/4 cups all-purpose flour
2 1/2 teaspoons baking powder
1 teaspoon salt
1 1/2 cups sugar
1/2 cup lard
2 eggs
1 1/2 teaspoons vanilla
1 1/4 cups milk
Combine flour, baking powder and salt.
In large mixing bowl cream sugar and lard until light and fluffy. Add eggs and vanilla; beat well. Add flour mixture to creamed mixture alternately with milk, beating low after each addition.
Pour batter into two greased and floured round cake pans. Bake at 375° for 30 to 35 minutes or until toothpick inserted in center comes out clean.
Cool cakes in pans on wire racks for 10 minutes then remove cake from pans.
Delicious yellow cake, we ate it warm without any frosting!!
(I also halved this recipe since there are only two of us!)
