Rachel this is such a smart thing to do. When I was pregnant with my twins, I made double batches of lasagna, cheesy chicken rice casserole, enchilada casserole, and fettucini alfredo. We would have one for dinner and I would freeze the second one in an aluminum baking dish. It was a life saver once the babies were home. The church and family provided meals for about 10 days and after that I could just pull a casserole out and bake it for the family. It worked out wonderfully. We were already a family of four before the twins came, so already prepared food was a blessing to this mom! :-)
