Meatloaf with Sweet & Sour Sauce

This is one of John David’s favorite meat dishes that his mom made when he was growing up. I had never liked meatloaf until I tried this meatloaf and I love it! It’s really easy, inexpensive and delicious!
Meatloaf:
1 pound ground meat
1 egg
3/4 cup oatmeal
salt and pepper
Mix together all ingredients. Bake in a greased baking dish on 375 for 45 minutes.
Sweet and Sour Sauce:
1-8oz can tomato sauce
2 Tbsp. apple cider vinegar
2 Tbsp. brown sugar
1/2 cup sugar
2 tsp. mustard
Boil all ingredients and pour over meatloaf last 10 minutes of baking.
We typically make this in a small cast iron skillet however we have baked it in a loaf pan and an 8×8 casserole dish.
Ways to make this meatloaf cheaper:
- Use ground venison instead of ground beef
- Add in a little more oatmeal to make it stretch further
* I realize all the sugar in this doesn’t make it good for us as a dinner dish but it is delicious so we’re going to eat it every once in a while!
