Eat from the Pantry Challenge Plan

I’ve decided that I’m joining in with Crystal and Jessica for an Eat from the Pantry Challenge in January! At first I was not sure that we could eat from the pantry and freezer for a month, but once I sat down and and wrote out a menu I was able to come up with 23 meals! With leftovers, our date night and cooking a few of these meals twice (that I have the ingredients for) I figure this list of 23 meals will get us through the 31 days of January!
My “rules”:
1. I can purchase milk, cheese, eggs, sour cream & produce
2. Spend $50 or less during the month of January
3. Put the remaining $110 of our grocery budget in our home improvement fund!
Meals:
1. Country Ham with Pinto Beans, Greens & Cornbread
2. Chicken & Dumplins
3. Chicken Noodle Soup
4. Fried Chicken Legs with Mashed Potatoes & Gravy
5. Chili with Red Beans
6. Vegetable Soup with Corn, Green Beans, Potatoes & Purple Hull Peas
7. Meatloaf with Sweet and Sour Sauce, Shells and Cheese & Bread
8. Lasagna
9. Steak Fajitas
10. Fried Steak & Gravy with Hashbrown Casserole
11. Roast
12. Chili (In freezer)
13. Baked Country Style Ribs with Pintos & Cornbread
14. Mom’s Scalloped Potatoes
15. Sausage & Pepperoni Pizza
16. Baked Pork Chops with Chicken Pasta Sides
17. Monterrey Chicken Quesadillas
18. Baked Potatoes loaded with Sour Cream, Bacon, Mushrooms & Cheese
19. Potato Soup
20. Chicken Tacos
21. Cajun Pork Chops with Mashed Potatoes
22. Chicken, Onion & Potato Bake
23. Lemon Pepper Chicken with Cheddar Broccoli Rice
