Cheeseburger Soup

I learned to make this delicious soup from 2 of my roommates (who were sisters) my freshman year of college! It is easy to make and I haven’t served it to a person yet who doesn’t like it!

Ingredients:
1 pound ground beef
3/4 cup chopped onion
1 tsp basil
1 tsp parsley
4 Tbsp butter, divided
3 cups chicken broth
4 cups potatoes
1/4 cup flour
8 ounce Velveeta Cheese
1 1/2 cups milk
3/4 tsp salt
1/2 tsp pepper
1/4 cup sour cream

Directions:
Brown beef, drain.

In soup pot, saute onion, basil and parsley in 1 tbsp butter until veggies are tender.

Add broth and potatoes- bring to a boil. Reduce heat, cover and simmer for 10-12 minutes or until potatoes are tender.

In small skillet, melt remaining butter – add flour, cook and stir for 3-5 minutes. Reduce heat to low.

Add cheese, milk, salt and pepper. Cook and stir until cheese melts. (Stir frequently to prevent cheese from burning on the bottom!) Add ground beef to soup.

Remove from heat. Stir in sour cream; serve.

    Hey girl! When I saw the recipe on your page, I thought “hey, she learned that from me!” Glad we rubbed a little off on you! This is still my favorite soup/dish to make in the winter!

      I’m so glad ya’ll shared the recipe! We love this soup so much…in fact John David requested it as a special Christmas Eve meal this past Christmas!!
