More Produce

Yesterday I went out to the garden after a few days absence. I brought my basket and was glad I did once I got out there! I picked peppers, green beans, basil, lots of tomatoes, and a cantaloupe! My basket was so heavy I struggled opening our front door! (Isn’t that a blessing?)

All my produce!! I cut up the two Red Bell Peppers and froze them, the green beans (which are buried beneath the tomatoes) I blanched and froze. And I canned more tomatoes!!

I canned 3 quarts, 1 half-pint, and 1 jelly jar of tomatoes!!

That brings my total canned tomato count up to 13 quarts, 1 pint, 1 half-pint, and 1 jelly jar!

I had several questions about my “recipe”. I peel the tomatoes by putting them in boiling water, then core them and put them in a soup pot. Once I have cut all of the tomatoes up I boil them about 5 minutes, put them in jars with 1 teaspoon salt per quart and put them in the water bath for 45 minutes. (I follow the Ball Blue Book for canning guidelines.) There is a great Canning Tomatoes post at Cents to Get Debt Free. I hope this helps & happy canning!!

    It looks like there is liquid in the bottom of your sauce – is that correct?
    Do you stir it up before using?
    I love that your recipe for the tomatoes is so easy. Hubby purchased a “Canning for Dummies” book for me for my birthday in February. I also have the Ball Book that my friend gave me. Hopefully next year, I will be on my way to canning as well!

    Do you purchase your jars?
    I got a lot of mine from Freecycle. You’d be surprised how many people stop canning, but have all of the jars left over! I bought new lids, but that was a very small expense compared to purchasing the jars.
