Yesterday I went out to the garden after a few days absence. I brought my basket and was glad I did once I got out there! I picked peppers, green beans, basil, lots of tomatoes, and a cantaloupe! My basket was so heavy I struggled opening our front door! (Isn’t that a blessing?)
All my produce!! I cut up the two Red Bell Peppers and froze them, the green beans (which are buried beneath the tomatoes) I blanched and froze. And I canned more tomatoes!!
I canned 3 quarts, 1 half-pint, and 1 jelly jar of tomatoes!!
That brings my total canned tomato count up to 13 quarts, 1 pint, 1 half-pint, and 1 jelly jar!
I had several questions about my “recipe”. I peel the tomatoes by putting them in boiling water, then core them and put them in a soup pot. Once I have cut all of the tomatoes up I boil them about 5 minutes, put them in jars with 1 teaspoon salt per quart and put them in the water bath for 45 minutes.
