Abundant Provisions

We’ve been blessed this year with a garden that has been producing very well! My tomatoes are coming in!! I’ve been out to the garden twice this weekend and came back with a basket of fruits and veggies each time!!

Tomatoes, Corn, and Cantaloupe!

Look at all of those yummy fruits & veggies!!

I canned the tomatoes! All of those tomatoes only made 3 quarts of canned tomatoes! However, those 3 bring my total of canned tomatoes up to 10 quarts and 1 pint…preparing for Chili and Vegetable Soup this winter!!

  1. How many tomaote plants do you have?
    How long did it take for you to can 3 qts of tomatoes?
    Do you feel canning is worth the time versus going to Aldi’s and purchasing a jar for $1.09.

    I recently read a post on Phoebe @ Cents to get Debt Free’s blog about canning, and I was wondering your take.

  2. I have right at 25 tomato plants and about 8 cherry tomato plants. It took me about an hour to peel the tomatoes and put them in the jars (then they are in the water bath for 45 minutes but I don’t have to do anything). I do feel like canning is worth the time because I know where my tomatoes come from! I prefer the home canned tomatoes to store bought!

    My recipe:

    I just peel the skins off of the tomatoes and boil them and then add 1 teaspoon of salt per quart!

  3. I have a ton of cherry tomatoes from my neighbor and have been trying to figure what to do with them.
    So you boil the skinned tomatoes and add 1 tsp of salt per quart and then pour them in the jars and top them and put them in the hot water bath for 45 min to seal the jar. Is this right?

  4. My cherry tomatoes are so huge that I did can those too!

    I boiled the skinned tomatoes (in their juice & I didn’t seed them) for 5 minutes and then put them in the jars with salt & then into the water bath.
